The initial testing of ESX 3 beta is a success. The following is the config. It is very low end and certainly would never be prod, however it does show that iSCSI is alive in 3.0.

ESX Server:
Compaq DL360
Two 933mhz CPU
2gb Ram
Two 37gb hd RAID 1 with two logical drives, one for Console other for datastore.
Two 10/100 NICs
iSCSI SAN Server:
Compaq Workstation
2.8 CPU
Two 40gb hd one for Fedora Core 4 the other for iSCSI Enterprise Target
Two 10/100 NICs

There is one XP vm running and supprisingly responsive.
The next phase is moving everything to better server hardware and 1000mb NICs.
